If you can get an Apple 3.5 Drive case (with the appropriate interface
circuitry inside), you should be able to use any of these drive
mecahnisms in it, giving you an Apple 3.5 Drive.  (In fact, you will
actually have a SuperDrive if you use the drive mechanism from the IIsi
or LC 475, but you won't be able to access high-density or MFM-formatted
disks unless you also manage to get hold of the rare controller card
which Apple made to support the SuperDrive on the Apple II.)

No.  In order to install a working IIgs system on the server, you need
to be running a IIgs client which boots locally and logs onto the
server.  You then have to run the IIgs installer and select the
appropriate installation option to get the necessary files onto the
server.

You can't copy these files from an Apple IIe (or emulation of it),
because many of them have resource forks.

It should be possible to set up the IIgs system software by manually
copying the required files on the Mac itself, but it would be rather
error prone.
