You cannot boot GS/OS from a 5.25" floppy (even if you could squeeze a
minimum system onto one, it will refuse to boot).
You will not be able to use AppleShare on the IIgs until you have a 3.5"
drive.
Even if you manage to set up an AppleShare 2 or 3 server on the Mac
(with Apple II booting support), you need at least one IIgs with a 3.5"
drive to set up the system software on the server.

Well, they work, but only after you've booted via GS/OS to load the
AppleTalk support software.
It may be possible to use the workstation card in a IIgs, in which case
you will be able to use the same software as you would on a IIe. Some
applications might be confused by such a configuration, expecting to be
able to use the native IIgs AppleTalk support if they are on a IIgs, but
most programs should behave themselves.
