Many things are possible.  Some are just easier than others.  :-)

While it is almost certainly possible to do a basic X11 server for the
GS, given the speed of the machines it was originally programmed on,
etc.  I would suggest a different approach if you are serious.

VNC - Virtual Network Computer http://www.uk.research.att.com/vnc/ is a
remote frame buffer protocol and implementation from AT&T UK Research,
formerly the Oracle/Olivetti lab.  It is a much more likely candidate
for the transfer.

As a remote frame buffer, it just reponds to very simple bit commands,
and sends mouse/kbd events back.  It has no where near the size and
overhead of an X server that has to have state, and respond to complex
drawing commands, etc.

To make the environment work as you discuss, you would need your target
unix box running the VNC server, and display your X clients to it.

The new work is the VNC client for the GS.  Considering one has been
written for the Palm, that should be quite doable.
