The ZipGS socket mod is not all that risky for someone with a little experience using a soldering iron. Mainly, you need to have a decent iron ('pecil type', about 30-35 watts with a narrow, pointy tip), a damp sponge to wipe the tip; and, use good quality rosin core solder (something like Kester Multi-core, 63 tin alloy).
There are a few problems with using the socket adapters you mention: they are fairly expensive, they add to card thickness-- your RAMs may end up bumping against an adjacent Slot board, and they add another set of contacts to corrode, work loose, and cause problems.
