Sounds like 16-bit mode failure and/or memory problems.
This can be caused either by a faulty cache RAM or by
a bad cable.

You may need a new cable. These are apparently
tricky to build because they are not wired exactly as
they seem. Someone on this newsgroup should be
able to provide you with the method to build one.
Some bad connections resulting in lack of 16-bit
stability makes sense because more data lines are
used in 16-bit mode than in 8-bit emulation mode.

Try the cable first. If not, ///SHH Systeme is selling
cache boards. You can get one empty and fill in the
chips yourself.
You can also try a faster oscillator. Believe it or not,
I got email from a user who had a ZipGS that no longer
worked at 7Mhz or 8Mhz but worked fine at 9Mhz or
faster. I have no idea why.
