The resistor to GND holds the 'Button Output' at logic 0. Pressing the
button connects +5V to the output. Now you have +5V across the resistor
(which, at 680 Ohms, is a pretty light load) and the output goes to logic 1.

Right. Any SPST normally open (no) momentary push-button switch which
fits will work. For a joystick, the click action mini-switches work very
nicely because you get a clean breakover with a click you can feel and hear.
