I know you said "something like a zcode interpreter", but just to be clear,
there are already several of these ported to the GS.  There's the one 
included with the Apple II Lost Treasures of Infocom which is based upon 
the first or one of the first generic zcode interpreters - ITF (InfoTaskForce).
I ported Frotz, and while my version is called 1.0a1, it's usable. 

About the only things that could be done better on an Apple II zcode 
interpreter are:
* a better 8 bit interpreter -- one that you can just run from ProDOS 8 and
play the games fine.  This would be GREAT.
* a GS one that handled version 6 games - these are the Infocom style games
with more pictures and sound.  The pictures and sound are in the datafiles in
a particular format so they have to be converted on the fly.  (They're fairly
simple.)
