Yes you can.  The problem is that you need a program called
Shrinkit! GS (GSHK) for converting the .shk and .sdk (shrunk
archives and shrunk disks) back into real disks.  But if you have
a Mac, you can break the chicken and the egg paradox by
using the Mac to first get Shrinit! GS up and running.  Here's
how:

1) Get ProTYPE from the following site.

2) Install ProTYPE

3) Get ShrinkIt! GS from the following site (ftp in binary mode
   or right click with a Windows browser or click and hold with
   a Mac browser and select download link/file).

4) Pass all four gshk file archive through ProTYPE onto a
   ProDOS or HFS disk (preferably HFS if you already installed
   it.  ProTYPE will extract a single file.

5) Take the ProDOS or HFS disk to the IIGS and double click
   on the .sea file's icon.

Now GS ShrinkIt! will self extract.  You can use the resulting
program to unpack all your .shk files.

DeltaDemo is the coolest FTA demo.

(the above URL should be a single line.  If it has wraped
around, just staighten it out and put in the URL box of
Netscape. Use right click on Windows Netscape or click
and hold on Mac Netscape on the link and select "download

Pretty amazing, huh?  The IIGS was the first Apple computer to
use the Apple Desktop Bus (ADB).  Since then, all Macs have
used it until the iMac.  ADB has not changed, which is why ADB
devices still work on the IIGS.

Even the keyboards that don't work will work if the equivalent
IIGS driver were written.  Same goes for joysticks and other
input devices.

Yup!  Those are DiskCopy images.  Problem with System 6.x under
a disk image is that you can only boot the System disk, which is not
a full install.  I suppose when you get Bernie (I assume that's the
emulator you are after since you have a Mac) up and running, you
should install everything to the hard drive volume so that you have
a full install of System 6.0.1.

Bernie is the best IIGS emulator, but not even it supports ALL the
hardware graphics modes of the IIGS, so better download those
demos and watch them while you still have the real thing (there is
currently no way to replicate the scan line synchronization of
multiple palette/resolution video modes of the IIGS on an emulator).
