That's going to be tough without destroying them. You can remove the ring binder strip easily enough, but the punched edge will make sheet-fed scanning next to impossible. You would have to shear about 1/4" off the entire book to have a chance.
Manual scanning of the complete book is certainly possible, but an exercise in tedium.
