I went throught the same experience recently. I downloaded onto images
onto PowerMac and transferred to 800K ProDos format using th older version
of Diskcopy. These gave the "unable to load ProDos" error that you report.
I skirted round the problem by dumping the images onto an SE/30 and
re-creating the ProDos disks there. The second set installed perfectly.

The PowerMac 6100 does use the latest 3.5" disk drive (note that this is
approx 2/3 the height of the older Sony drives) which might be a cause of
problems as suggested by Randy Shackleford. I'm also a little suspicious
of PC Exchange. Newer versions of this (as supplied with System 7.5
onwards) allow you to mount and format ProDos 3.5" disks as well as PC
disks.
