Yes, it is possible. You can use an 800k Apple UniDisk 3.5 Drive with it's
own UniDisk 3.5 controller card or an 800k Apple 3.5 Drive with the earlier
Apple 3.5 Drive controller (or HD Apple SuperDrive controller card), or an
Apple 1.44 MB SuperDrive with the SuperDrive controller card. Additionally,
you can chain a second 3.5 drive onto the first if you need to later on.
Your cheapest and easiest way (IMO) would be to use an 800k drive. However,
finding a controller card might not be as easy. If you can work some deal
for the 3.5 drive and controller card out of that other IIe that the
business owner has, that would probably be the easiest way to go about it.

That's up to you. When I had my IIe, I had one hooked up and did make use
of it. I used a Finder-like interface called Desktop II, which enabled me
to launch programs just like the IIGS and perform serveral other desktop
functions. Also, AW 5.1 has mouse capabities built in. So do some others
like PublishIt 4! You can live without it (IMO) on a IIe, but I enjoyed
having one hooked up.
