Pretty easy.  Set your ZipGS so it is _off_ all the time.  Set up the 
init or control panel so it switches to 100% when you boot your hard
drive (if I remember correctly, the software that came with the Zip
did this).  A cold reboot will be "Fast" mode so you can play older GS
games with the proper speed.  Normal GS desktop access via your
hard drive will use the accelerated speeds.
