Last time I checked it was courtesy of Fast Eddie Labs (formerly Bright

You should locate a copy of DiskCopy, a copier from Apple. You can copy disks
and save them as disk images. (Push the buttons "Read Master" and then "Save As
Image" or so). Next, back in Fast Eddie, choose "Mount Disk" to load the image.

The docs are merely describing Fast Eddie, not how to use or install GS/OS or
Prodos. Once I got some time to spare, I'll see if I can add some help text to
the EddieWeb.
