One utility that should do the trick is called File Attribute Zapper
(FAZ). FAZ'll let you set the file type to anything you want.

On a side note, I've found a IIGS a great tool for moving files
around. In this case you could use ShadowWrite to load the data,
regardless of the file type, then save it as text. I think the
latest version of AppleWorks will let you brute-force load a file
as well.
