A good place to start, no matter what emulator you are looking for, is:

Of the Apple II emulators, the good ones are:
1) ApplePC - A DOS app that emulates a ][+, //e, or //c. Also emulates access
to a printer, serial port (modem), and, of all things, a MockingBoard.
OOPS, almost forgot joystick, and in //c mode a mouse.
2) The other one is AppleWin - Requires Win32s, Windows95, or WindowsNT.
I think it may need WinG as well (only for Win31). It emulates less but
the user interface is better. Both run much above normal 1MHz Apple II
speed on my AMD5x86-160. But should do fine on most slower systems.
The above mentioned web page has links to all kinds of emulators. Some
systems I've never heard of.
