How an I expand/enhance this system?

It's been a _really_ long time since I had an Apple ][ but I
 got lucky and found one today at a yard sale, yippie! :)

It been so long I can't remember what most of these cards and
 stuff do, and there are no manuals for them.

I got:

Apple IIe 
Green mono/composite monitor (can the IIe do color?)
1 x Apple disk drive
1 x Strange disk drive, SCI brand or something (special at all?)
1 x 1200 baud internal modem (pretty straight forward)
1 x Super serial card (also easy but not installed)
2 x disk controllers
2 x 80 col cards
1 x printer card (seems to take memory as well but none installed?)
 (If anyone has a manual for this type of card I have many chips I
  could possibly fill those rows with)

1 x something called a 'Scooter II'.  Its a PCB w/ a ic insert attached
 to a ribbon cable.  The pcb has 2 ZIF sockets on it and a switch.
 What does this thing do?

Can I get a color adapter for it if it cant do color (im not sure).
