I had no trouble getting a Zip Drive to work on my IIgs, but like you I
could not partition the drive. I had to keep it as an HFS volume, or I
could format it as ProDOS, but with one 32 Meg partition. The Mac would
not recognise the ProDOS partition. It's worth pointing out that I have
had exactly the same problems trying to format and partition a SyQuest
135EZ, so I don't think the problem is necessarily specific to the Iomega
drive.

The other problem with the Zip drive is that it powers down after a few
minutes of inactivity, and when it does this GS/OS loses it from its
device list. You have to eject the disk and remount it for GS/OS to find
it again. The SyQuest doesn't do this, so it's a little less frustrating
to use from that point of view. I'd still like an answer to the
partitioning problem, though.

Just fo interest's sake, my IIgs has an Apple HS SCSI card, a 127 Meg
Quatum HD with 2x32 ProDOS partitions, one 10 Meg ProDOS partition, and
the rest HFS.
