I haven't verified that it is the case with all models either, but I
have a DW-C and it does have built-in fonts.  However, as David says,
you have to run the serial connection at 57.6K, which isn't available in
any 8-bit programs I am aware of, except ProTerm.

When someone updates the Apple Chooser and/or Net Printer Control Panel
to allow non-Apple printers to be selected for AppleTalk, you should be
able to print to the DW from just about any program that uses the
printing firmware.  It's high on my to-do list, since I want it myself
quite badly, but I've got some other stuff to finish up first.
