Of course you can access server volumes with ProDOS 8 apps. You have to log
on and off under GS/OS though. Unless you happen to have the 8 bit log on and
log off apps from the workstation card software that is. Your server volume
must have a name legal to ProDOS though, as must all directories and files
you want to use.
The second problem is cured with a one byte patch to the PT3.CODE0 file which
I got and used ages ago. No such problem for me. Maybe if I dig it up and post
again someone can add it to the FAQ.

Can't help out too much there, I have a laserwriter and an IW II with network
card for printers myself and don't have to go through any switchbox rigmarole
to print.
