help, commands, syntax

I have just aquired several apple IIs and apple II pluses.
I will be using them for miminal data aquisition projects, but I no longer reme
mber any of the commands and syntax to run them.  If anyone has a listing of
commands, address descriptions for pokes and peeks, and other basic programming
 syntax for these machines please let me know, or if there is a FAQ or other si
te to get this info.  Also I am interested in getting any information about the
 hardware itself, and what every thing is inside the case and what it is used f
or.  I would like to create some of my own cards for these machines.
