The switch settings should be in the manual that came with the card.
You'll need two of them if you want to add a modem...unless you buy an
internal modem.  (Warning: the fastest internal modems for the II only
go up to 2400 baud.  If you're willing to live with this limit, an
internal modem would probably be cheaper than an external modem and a
second serial card.  If you're a speed freak, though, you'll need
another serial card to drive your external modem.)

If you run into a device called the RocketChip, grab it.  I had one
once...at 10 MHz, it was the fastest accelerator made for 8-bit Apple
IIs.  It's been out of production for several years, though.  An 8-MHz
ZipChip should be easier to find; a 4-MHz ZipChip would be fairly
inexpensive.  The TransWarp is the slowest of the bunch (3.58 MHz),
but you can replace its 65C02 with a 65802 to mess around with 16-bit
programming.

That's all they are...II Plus motherboards in a black case with some
extra power outlets and headphone jacks in the back.  People were
using them for multimedia presentations long before "multimedia"
became the buzzword that it is today.
