Well Nathan.... if you don't want to be outlaying much money, SynthLAB
is a very accurate and simple program.  However, it will not put
your music in any form of notation of the like, it merely acts as a
(quite powerful) synthesizer.  If you want a notating program, I've
heard the best program to use is Pyware's MusicWriter; but with it's
professional version with a price tag of around $600.. im not sure if
it's worth it for you!
