Unless you have a RAMFast, you can only boot the first partition
of a hard drive. Another option is putting both Systems on the
first partition and renaming them as needed.
ie: 5.0.4: System504
    6.0: System

System 6 will boot.

  5.0.4: System
  6.0: System6

System 5.0.4 will boot.
 
This assumes the ProDOS file in the root directory is compatible with
both Systems, else it too would need to be renamed.
 
Or you could junk the unstable program.
