for the IIe:  Contiki (includes web browser, ftp, email, IRC, most
just proof of concept)

ADT has also been updated to use Uthernet.

I have: IIe, transwarped, focus hard drive, UDC3.5 controller, with
Uthernet, running contiki.

same here.  The IIgs feels like a toy to me.
