I see what you mean, but the dither is also present at pretty high
amplitude in the luminance component, so I'm surprised if S-video
helps much.

In general, RGB and Component should be regarded as equivalent
in bandwidth and color capability.  S-video is a distant second,
and, of course, composite brings up the rear by a wide margin--
unless, of course, the material you are displaying is natively
composite.  ;-)

To easily observe the chroma bandwidth limiting of S-video, just
hook up a DVD player using S-video and view the beginning "scroll
into infinity" titles of any Star Wars movie.  The text will be
golden at the lower, and lower spatial frequency, "foreground"
part of the screen, and it will fade to light gray as it scrolls
into infinity, and ever narrower features.

exhibit the dithering effect.

That's probably because of bandwidth rolloff in the S-video signal
processing.  16MHz is more than most S-video inputs will expect.

Unfortunately, this may also compromise sharpness of small features,
like text.  And small features with hue contrast but no luminance
contrast will be nearly invisible, since S-video chroma information
is band-limited to well under 3MHz.
