MP3 is probably not the best format.  I tried it once and it worked
successfully, but I don't really trust it.

I don't know much about the Apple I.  You should be able to tell a little
by comparing a couple of tapes by ear, just to see if they have the same
lead-in tone.

If it "sounds reasonable", I'd convert the MP3 to 44.1KHz 16-bit mono
PCM and then try the different conversion options if you didn't do that
the last time around.  The simple "zero crossing" mode often doesn't
do the trick because the tape, the tape player, or the PC input screw
something up.
