I actually boot traced the roms and ran the code to see the easter
egg. I believe if you set the card to rom1 and then boot (6 ctrl-p or
$C600G) you'll see that message, the 16 SECTOR message, and it should
boot too.
I extracted the text using CiderPress. You won't see it in most hex
editors because the high bit is set in Apple II text. The hex editor I
currently use, despite its many flaws, is fhred on Windows. There's an
interesting list on Wikipedia under Hex Editor, and you can choose one
by license, price, platform etc.
To answer your other question, rom2 is exactly the same as the Apple
disk ROM.
