If you really own the collection, I'd be willing to send you the
original pre-Origin Release of Ultima I in NIB format, if you consider
that emulator friendly; or a couple of normal disk images that recreate
the U1 disks in the original format when you boot them, but those work
only on real hardware.

Can't help with U3, sorry. I have the (un-notched, thus probably
pristine) original disks but not any emulator usable copies.

If you're an originality junkie, be advised that most current Apple
emulators get the colors quite wrong.
