Oops, I just remembered the easiest way to extract files from a DSK file!!

Use a recent version of the AppleWin emulator. It includes a very nice
built-in utility that enables you to write individual Apple files from a DSK
to an MS-DOS file.

AppleWin is MUCH nicer than the utilities I listed in my other reply! Very
friendly.
