The ATI0..7 commands usually give some indication. On my 33.6kb/s modem
I get the following:
ATI
336
ATI4
Simplemodem 336 V1.510.00 <- Brand and model
ATI6
RC288DPi Rev 05BA <- this is the Rockwell chipset
If it lists the standards then you can also tell:
V.21 300 Bell 103
V.23 1200/75
V.22 1200 Bell 212A
V.22bis 2400
V.32 9600
V.34 28800 and 33600
V.90 56000

Yes, they are supersets of data only modems.
