I'd personally stick with the IIGS and SE/30, because those are my favorite two Apple products! But I believe the original Mac LC can run System 6 - I've been thinking about trying it out on mine. (The Mac LCII might run System 6, but I'm pretty sure LCIII and later do not).
One additional factor with the IIe PDS card is that while the cards are fairly easy to find, apparently the cable that connects it to the drives is somewhat proprietary and hard to find. I'd love to see that proven otherwise!
