New IIgs Owner Needs Help Copying Disks

I'm a new IIgs owner.  I have some old Apple games from my Apple II days.
They still work, but I haven't backed them up, so I'm going to do that now
that I have them all back out.   I have a 3.5 and a 5.25 disk drive.

Question 1:  How do I make backups of my original game disks?  Not familiar
with the commands to make copies, etc.

Question 2:  Some are copy protected.  Is there a good utility out there for
backing up copy protected games?

Maybe the answers to my questions are on a Web site somewhere, but I haven't
been able to find anything.  And I'm trying to get some manuals on ebay.
