The easiest way to do this would be if you has a Hard Disk with System 6 on
it. I cannot say enough good things about the Focus Hard Drive that
Computer Circulation distributes. With it you get a full System 6 install
as well as "gshk" (zipping type utility) which will allow you to make
archives of all of your old programs, you can then put these shrinked files
onto the hard disk in case the original floppy fails. The Focus Drive is
the easiest thing in the world to install, it really takes about 2 minutes
and boots up perfectly the first time!
If you don't feel like shelling out $70 bucks, you could backup stuff pretty
easily with an older mac that will read 800K floppies.
As far as the 5.25 disks go, I am not too certain, but this is the right
place to ask, I had similar questions a few months ago and everyone was very
helpful. If it was not for this group, I would have given up on the IIgs
that I bought.
Good Luck!
