The file format of all files from AppleWorks 3 (and earlier versions)
are described in Apple's file type notes, which formed part of the Apple
II Technical Notes. I don't think they are available from Apple any
more, but someone else may have a copy online. (I have the full set on
one of my Macs, but not this one.)

The filenames would be "FTN.19.XXXX" (database), "FTN.1A.XXXX" (word
processor) and "FTN.1B.XXXX" (spreadsheet).

AppleWorks 4 and 5 made some changes to the Word Processor and
Spreadsheet file formats, mainly adding new features. AppleWorks 4
completely changed the format of the Database files. I recall seeing
documentation on at least some of these, probably from Quality Computers
or the authors.
