Yep, setting the Control Panel Display option to 'Monochrome' turns
off all color information through composite output (it has no affect on
the RGB port though).
One interesting thing is, like the Apple III, it will display all
graphic modes in 16 greyscales. If you hook up an old style
display like the Monitor II, even High-Res graphics will show
up in greyscales (smooth and solid) instead of dot and line
patterns as they do on an Apple II Plus, IIe, IIc and IIc+.
Output from a Video Overlay Card creates an even sharper
and smoother greyscale image. As a matter of fact, if you plug
one in a IIe, it should give identical results as it duplicates the
IIgs's video and more (true NTSC signal and interlaced video).
