Yes, you can place an old Mac battery holder on the Rom1 IIgs easily.
Your best bet is to orient the Mac battery holder so the 'top' of the
holder faces the side of the computer. Cut the battery leads at the
battery leaving the wires up. Lay the holder on it's side and solder
the leads to the contacts on the holder and then trim the excess wire.
Make sure you orient the holder so the polarity symbols match to avoid
problems with an improperly inserted battery down the road. The holder
is only slightly larger than the battery so it will not interfere with
seating regular IIgs power supply.
If you want a 'correctly' oriented battery holder in it's 'best
position', consider this before trying it. It may end up being a hair
too tall for the standard power supply and remember that the IIgs mother
board is not very heat tolerant and you could easily damage your IIgs by
ineptly soldering on it.

Just FYI, you can place almost any standard 3.6V battery connector on
the the main board just as easily as a Mac battery holder. Just remove
the old battery and solder in the connector leads, appropriately
borrowed from a PC other than a Mac.
