As long as the HFS FST is installed on your IIGS, that should work.  I've
created CDs with a combination of ProDOS and HFS partitions; the first
partition is even bootable if it contains a ProDOS filesystem with the usual
startup files.

I did my CD creation mostly on Linux.  ProDOS filesystem images obtained
elsewhere (created on an Apple II with ShrinkIt and extracted to image files
with CiderPress, for instance) can be combined with HFS images created by
either a loopback mount or by imaging an existing filesystem with dd.  The only
additional piece needed is a partition table, which you can generate with
this tool I knocked together:

I've only tested it under Linux, but I don't see any reason why it wouldn't
build under Mac OS X.  Concatenate the partition table and image files
together, then burn to CD with the software of your choice.
