The only way to obtain it legally would be to buy it from someone who is
no longer using it, and hasn't upgraded to a later version.  You might
like to try Sun Remarketing, but if they do have it, they will probably
charge a high price.  E-Bay perhaps?

I don't know how well AppleShare 3.0 will work on recent system software
versions.  It was released when System 7.0 was current, and I'd expect
it to work fine with System 7.5.5 and earlier, and probably with 7.6.1
and 8.0 as well.  Once you hit 8.1, it might have problems, and more so
with 8.5 or later; it might not work at all with Mac OS 9, or if used to
serve an HFS+ volume.

File sharing places a background load on the machine (it makes a slower
Mac noticeably slower, particularly while data is being transferred).
AppleShare is similar, but it can steal even more CPU time, depending on
the number of active connections.

Yes.  LocalTalk is about the speed of a floppy, so trying to boot more
than one IIgs at once will very rather slow, but the only technical
limit would be the maximum number of machines you can get onto the
LocalTalk segment.
