14 volumes (including /RAM in slot 3, drive 2) for ProDOS 8.

For GS/OS, I think the limit is 64.  And if you get beyond
that, you can reduce your partition number by changing some
ProDOS partitions to HFS ones (which can be up to 2GB
per partition).

Effectively this means GS/OS can use as large a hard
drive as your SCSI card will allow (CMS SCSI card does
not allow such flexibility, but find an Apple High Speed
SCSI card and use 2GB or greater SCSI hard drives).
