The chip that apple uses for appletalk (at least in my mac SE, macIIx,
macII, macIIcx, and laserwriter IIntx and IIg) is a zilog serial/sdlc
controller. Zilog is very nice about posting information in the form of PDF
formatted documents. If you cant find the info on zilog's site
(http://www.zilog.com), have a look at questlink (http://www.questlink.com)
under their IC index. Just search for the part number, which I believe is
z8530 (it's ID is similar to the vintage mac's scsi chip, the 5380).
Over all, getting the chip on a //gs (or //e, etc) should be pretty easy.
Programming a kernel extension for it is way beyond my knowhow in the apple
world =)
anyhow, have at 'em!
