Sure - use a Greek font on the IIgs (which will be printed grahpically).

If you mean "in text mode" (e.g. AppleWorks classic), then you could
theoretically use a downloaded character set definition to replace the
normal alphabetic characters with Greek letters.

The tricky part is getting the software to set up the character
definitions, downloading them, and then selecting the downloaded font in
AppleWorks.

The same method as described above would be possible, but in this case
you have the complication of needing more letters than are available in
the normal alphabet.  You would have to replace additional symbols in
the downloaded font.
