Yes, pretty much any external modem will work and Mac high speed
hardware handshaking cables usually work (most, if not all, don't have
the DCD line connected so you can't tell whether you're online or
not).  However, Intrec still sells properly wired IIgs hardware
handshaking cables and the pinouts for these cables are available
online if you want to make your own.

I currently use a 33.6 kbps modem on my IIgs with no problems.  I
don't think there would be any problems using a 56 kbps modem with the
IIgs.  Keep in mind that even an accelerated IIgs won't be able to
take full advantage of that fast of a modem.  My 8 MHz machine can't
even take full advantage of my 33.6 kbps modem but it comes close.
