Ok, a really friendly guy on here was able to send me a IIgs version
called M&MB Plus.  Thank you so much!  This really helped me narrow it
down.  So, the Plus version is very similar to the original IIe
version, with the addition of a few new backgrounds and shapes.  But,
here's the kicker, one of its backgrounds is much closer to the one I
remember on the IIe from my youth than the current IIe version I've
got (1.1).  Given these have almost the same graphics (i.e. it was
probably a simple port), I'm beginning to think that between 1.1 on
the IIe (called simply Monsters and Make Believe), and M&MB Plus on
the IIgs, there must have been another version on the IIe- basically a
bridge between the two -that had more of the graphics I'm seeing now
in Plus.

So, if you have any disks for the IIe labeled M&MB 1.2 or Plus or
anything later than 1.1, please let me know!!  I've already found an
enormous amount of info thanks to you guys, and I can basically call
this wrapped.  But you know how it is- I would still really love to
find some in between version for the IIe if it exists.
