Most likely two drives at maximum when talking about either the
Apple 3.5 or Apple SuperDrive (you may be able to use more than 2
UniDisk 3.5 drives, though why anyone would want to use the card to
operate _any_ UniDisk's is beyond me).
I'd recommend installing it in slot 6 (most people rarely use
their 5.25 drives, and can easily re-enable it easily enough) and
connect any Apple 3.5 drives to the GS's Smartport in back. This
ensures you have compatibility with older software titles that are
hardcoded to work run from drives connected through the Smartport
(this includes almost all the FTA demos).
