The way I killed this snake was to use an emulator that runs on a mac,
there's one for the IIe written by the Tan Bros. which really works
great. It'll kick you off after 45 minutes unless you pay the
shareware fee, but you can do all the conversion you need in that
time. It will write Prodos disks right from your superdrive and you
can set up image files on your hard drive to emulate a hard drive. The
only shortcoming is that it only works on 8 bit files. You can't run
GSHK, the unpacking util for the IIgs on it. There's also a IIgs
emulator but it's a slug unless you have a PowerMac, I never really
tried it. 
You can get the GS/OS disk images from the apple ftp site, can't think
of the URL, go to www.info.apple.com and poke around for software, you
will eventually end up in the ftp site. The right files are Mac
Diskcopy images in a BinHex wrapper, just use Stuffit expander and
Diskcopy, make sure you have Prodos 800K disks handy. You can get them
if you have PC exchange installed and working, when you format them,
choose "Prodos" instead of Mac. (So that's what Prodos was all about,
I been wondering that for years). You can boot to GS/OS from the
second disk if you have 512K of memory, but you need 1.25 meg to
really do anything with it.

Mates had a great FAQ available (html). I was fortunate to have
downloaded the whole thing last summer when I was in you shoes. If you
