I'm envious of your success with the Etherwave and would love to figure out
why we're having such different results.

What is the part number on the bottom of your Etherwave?  What firmware level
is it at?  Did you do anything special to configure it or your network?

To date, the only bridge devices I've had success with are Kinetics/FastPath
4s with newer firmware and my trusty Gatorbox CS.

The Etherwave (both of them I've tried) units start off fine, but after about
two minutes they quietly stop forwarding the ASP tickle packets.  Both sides
independently conclude that the other end has vanished and knock down their
sessions.

Possibly not as mysterious as Tony's travails with the Apple Ethernet card,
but vexing nonetheless.

I'm not totally in the clear.  Here's what I've observed with my
EtherWave.  If I boot from my CFFA and mount a netatalk volume, I can
keep the volumes up for hours and hours.  If I netboot from netatalk,
the mount is accessible in the first few minutes, but then closes down
by itself after that.  Characterized first by unresponsive mouse
clicks, and then followed by a message "The file server xxxxx has
closed down."

Precisely what I see - regardless of how I connect.

I've got a ROM3 with a ZipGSX disabled by the DIP switches, but re-
enabled from the CFFA boot through the ZipGS system setup.  Also
loading about half a dozen other stuff from the CFFA boot.  The irony
here is that it doesn't disconnect the volumes when booted via CFFA.

No such luck here. My IIGS is a ROM3 with ZipGSX hotrodded to 12.5Mhz., 8MB RAM card, Ramfast Rev. D, external SCSI hard disk plus an internally installed Applied Ingenuity Innerdrive. I haven't tried netbooting the GS (just my IIe), but sessions always drop in a minute or two.

I'm using an EtherWave Mac/PB adapter.  I don't see a part number at
the bottom.  It's the model with the power taken from the ADB port.

That's the exact one I have.

I'm not really that fond of the EtherWave, but it do has its
advantages -- power from the ADB port (no wall wart), auto-sensing
10/100Mbps Ethernet port (no need for an in-between 10Mbps hub).  And
if I don't netboot, it works without problems.  Maybe WireShark traces
are in order.

Been there, done that. All they will show is that the ASP "tickle" from the IIgs client stops appearing after about two minutes. The ones from the server continue on their way, but with no response forthcoming, the server declares the session dead. All the while that the IIGS tickle fails to appear in the trace, you can watch the localtalk activity lights continue to flicker at 30 second intervals. My working theory is that both units are sending the packets, but the bridge simply stops forwarding them.
