Take a look at the comp.sys.apple2 Frequently Asked Questions (FAQ)

Short answer: install System 6.x's Appletalk/Appleshare software
on the GS. Turn on (personal) filesharing on the System 7.x mac. Make
sure Appletalk is enabled on both machines. Connect with a cable--
Imagewriter II cable will do fine from printer port to printer port
if only 2 machines; go for some of the phonenet type connectors
if >2 machines.

This is indeed the case; only the GS has read/write access to
whatever you've got shared on the Mac side, with the Appleshare FST
installed.

There's short pieces referenced from the comp.sys.apple2 FAQ; for
some reason, I appear to be incapable of writing a FAQ less than 50K
in size, so this wouldn't get its own FAQ. :)
