    If you want something simple and inexpensive, I'd suggest the
Apple MIDI Interface. It's a little box-shaped device (about the
size of a match-box) that connects to either serial port on both 
an Apple IIgs or Macintosh. It provides you with a standard pair 
of DIN5 connectors (MIDI IN/OUT) and comes with two MIDI cables.
Mac Warehouse was selling it for US$30 about a year ago, or you
can purchase it from Apple Computer directly, though probably at
a higher cost.

    If you don't mind searching for used hardware, the AE Audio 
Animator supplied the IIgs with a MIDI interface (IN/OUT/THRU)
as well as stereo-output, digital sampling and a sound mixer.
Then there's also the Passport MIDI Interface card, the Opcode
Professional Plus and Studio Plus Two  (the latter two might
still be available, considering they worked on the Macintosh).

    Make sure your synthesizer is MIDI compatible, check that there
are MIDI IN/OUT ports and a switch (usually) to enable that mode.
I know that is probably stating the obvious, but I've known people 
to buy synthesizer keyboards and wonder why it won't interface with 
their systems. :) 

    Oh, 'comp.sys.apple2.marketplace' may not be the most ideal place
searching for the Apple MIDI Interface (the one I described above).
You might want to try some of the Macintosh groups, such as these: 
'comp.sys.mac.wanted' or 'misc.forsale.computers.mac-specific.misc'.
Assuming Apple removed the item from it's price-lists, otherwise
just purchase one new and save yourself the time and trouble.
