Bill,
You can use just about any SCSI hard drive. Most Macintosh-marketed SCSI
hard drives will work with the IIGS, but in order to use them, you'll
need to purchase a SCSI card and obtain a set of HD formatting
utilities. I would recommend getting the RamFAST SCSI card. (Someone
else has posted an excellent comparison of the various SCSI cards which
you might have already read...in any case...) It is very fast and is
still manufactured/supported by Sequential Systems. You can
also use Zip Drives with the RamFAST. I've got one running as a primary
HD on one of my IIGS's.

Sure, as long as it is a SCSI drive. You can also use IDE drives, but
you'll need the TurboIDE card for that. (I don't know much about this
card, but from what I've heard, it works well.)

Check out comp.sys.apple2.marketplace. Sometimes you'll see some ads for
HDs.
