Two possible causes come to mind:
(a) You used "Easy Update" to install the system software, and there was
already somthing on the disk that caused it to add AppleTalk support.
Not likely, since you were going from scratch.
(b) You used "Customize" to install the system software, and installed
some AppleTalk component, such as any of the "Network" items, or
the LaserWriter printer.
Another possibility is a problem with the Easy Update facility which
causes it to install the low-level AppleTalk files under some
circumstances (this rings a vague bell).
Check if you have the file "SCC.MANAGER" in your System:Drivers
folder. If so, remove it (or at least mark it Inactive). It is only
used by AppleTalk, and it causes an error message if you don't have
AppleTalk enabled in the control panel. This will prevent any other
AppleTalk files from being loaded.
The AppleShare FST also displays a similar message at a slightly later
point.
